Creamy Lemon Dessert

Some puddings have a way of making an ordinary meal feel a little more special. Creamy Lemon Dessert is one of those favourites in my kitchen. It has a delicate citrus flavour, a silky consistency and just the right amount of sweetness. Finished with freshly whipped cream and a handful of seasonal fruit, it makes a lovely centrepiece for the dessert table.

I have always enjoyed making lemon puddings because they offer something different from the usual chocolate, caramel or rich sponge desserts. The gentle sharpness of lemon brings a welcome freshness, particularly after a filling main course. Here, that citrus character sits beautifully alongside the creamy base. Neither flavour overpowers the other, which makes it very easy to enjoy right to the last spoonful.

What I particularly like is how little this dessert needs when it comes to serving. A generous dollop of whipped cream adds another layer of indulgence without making the pudding too heavy. Fresh fruit provides a lovely contrast, both in colour and taste. Raspberries and strawberries are excellent choices, although blueberries, blackberries and redcurrants are equally tempting. During the warmer months, I also enjoy adding fresh peaches or slices of ripe nectarine.

There is no reason to reserve this pudding for summer, either. Its refreshing lemon flavour makes it suitable for almost any occasion throughout the year. In warmer weather, I like serving it after a barbecue or a relaxed lunch outside. When the evenings become colder, it provides a pleasant change after a traditional Sunday roast or a hearty family dinner.

Chilling is an important part of getting the best from this dessert. I prefer to prepare it well ahead of serving time and leave it in the refrigerator for several hours. This gives it time to develop its texture and ensures every portion is properly cold. It also means one less job to worry about when guests arrive. I always think desserts that can be prepared in advance are worth keeping in the recipe collection.

For presentation, individual glass dishes are a lovely option. They show off the pale lemon colour and make serving particularly easy. However, a larger glass bowl looks just as attractive when everyone is helping themselves. I would add the whipped cream shortly before serving so it retains its lovely texture. A little grated lemon zest over the top gives a final burst of colour and makes the citrus flavour stand out.

You can also have fun changing the fruit to suit the occasion. Red berries look particularly pretty for a dinner party, while a mixture of whatever happens to be available works perfectly for a family pudding. There is no need to make things complicated.

For me, the best homemade desserts are those that combine lovely flavours with a little simplicity. This lemon pudding does exactly that. It feels special enough for entertaining but remains wonderfully suitable for an everyday family treat.

Serve it chilled, add your favourite fruit and enjoy. Creamy Lemon Dessert is a lovely way to finish a meal, whatever the season.

Instructions

Prepare the lemons:

  • Wash the lemons and finely grate the zest from one of them. Cut the lemons in half and squeeze out the juice. Remove any pips and set aside.

Whip the cream:

  • Pour the 300ml double cream into a large mixing bowl. Whisk until it becomes slightly thickened and forms soft peaks. Avoid whisking it too firmly.
    300 ml double cream

Add the condensed milk:

  • Pour the condensed milk into the whipped cream. Add the vanilla extract and lemon zest, then gently fold everything together.
200 g condensed milk, 1 tsp vanilla extract, 1 large lemon

Add the lemon juice:

  • Gradually pour in the freshly squeezed lemon juice while gently mixing. You should notice the mixture becoming thicker as the lemon juice combines with the cream.
    3 medium lemons

Fill the dishes:

  • Divide the lemon mixture evenly between four individual dessert glasses or serving dishes. Smooth the tops with the back of a spoon.

Chill:

  • Cover the dishes and place them in the refrigerator for at least 4 hours. The mixture needs time to become properly set and chilled.

Prepare the topping:

  • Shortly before serving, pour the remaining double cream into a clean bowl. Add the icing sugar and whisk until it forms soft peaks.
150 ml double cream, 1 tbsp icing sugar

Decorate:

  • Spoon or pipe a generous amount of whipped cream onto each chilled dessert. Arrange your chosen seasonal fruit over the top.
    150 g fresh fruit

Finish and serve:

  • Add a little freshly grated lemon zest for decoration. Return the dishes to the refrigerator until everyone is ready to enjoy them.

Notes

Serving Suggestions:
Summer: Fresh strawberries, raspberries and blueberries make a colourful topping.
Autumn: Try blackberries, blackcurrants or sliced plums.
Winter: Pomegranate seeds and segments of fresh orange work particularly well.
Spring: Raspberries and sliced strawberries provide a lovely fresh finish.
Tips:
Use freshly squeezed lemon juice rather than bottled juice for the best flavour.
Add the lemon juice gradually to help the mixture thicken evenly.
Make the desserts the day before if you are entertaining. They will be ready and waiting in the refrigerator.
Keep the whipped cream and fruit topping until shortly before serving.
For a slightly sharper lemon flavour, add a little extra zest to the creamy mixture.
Storage:
Keep covered in the refrigerator and enjoy within 2 days. This dessert is not suitable for freezing, as the texture may change when thawed.
