Date Cake Squares are a true delight. Full of fruit (dates, prunes and raisins) and spices for an amazing cake and snack. These are lovely and healthy and help with my dietary requirements.

Ingredients
- 1 cup dates chopped
- 3/4 cup pitted prunes chopped
- 1/2 cup dark raisins
- 1 1/4 cups water
- 8 tbsp margarine cut into pieces
- 2 large eggs
- 1 tsp vanilla
- 1 cup all-purpose flour
- 5 1/2 tsp sweetener
- 1 tsp baking soda
- 1/2 tsp ground cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp Salt
- 1/4 cup walnuts chopped
Instructions
- Combine dates, prunes, raisins and water in medium saucepan; heat to boiling. Reduce heat and simmer, uncovered, until fruit is tender and water is absorbed, about 10 minutes.
- Remove from heat and add margarine, stirring until melted; cool.
- Mix eggs and vanilla into fruit mixture; mix in combined flour, Equal, baking soda, cinnamon, nutmeg, and salt. Spread batter evenly in greased baking dish, 11 by 7 by 2 inches; sprinkle with walnuts.
- Bake in preheated 350 degree oven until cake springs back when touched lightly, 30 to 35 minutes. Cool on wire rack; cut into squares.
