If your like me, Its the weekend and the children are hungry for breakfast. My go to recipe has to be Ham and Cheese Scrambled Eggs. This simple recipe is ready within 15 minutes. The dish is filling and very tasty and can be adapted to include paprika, English mustard or a sliced chilli without overpowering the eggs. Serve as a main dish for breakfast or brunch. Don’t forget to add a sprinkling of chopped chives for an mild onion contrast.
I have used cheddar in Ham and Cheese Scrambled Eggs recipe but feta, pecorino and goats cheese are superb alternatives. Each one brings their own flavour and textures.

Ingredients
- 4 large eggs free range
- 60 g ham cooked/dice/slice
- 30 g cheddar cheese pecorino/feta/goats
- 8 g unsalted butter
- salt to taste
- white pepper to taste
Instructions
- Add the eggs to a mixing bowl and beaten lightly.4 large eggs
- Add the diced ham, cheese, salt and pepper and stir to combine fully.60 g ham, 30 g cheddar cheese, salt, white pepper
- Place a frying pan over a medium heat and add the butter.8 g unsalted butter
- Once melted, add the mixing bowl contents and gently stir until the eggs have reached the consistency you want. Anything between 2 – 5 minutes.
- Serve with a sprinkling of chopped chives for that finishing touch.
