  • In a bowl, mix the chicken pieces with cornflour, plain flour, black pepper and a pinch of salt. Toss until the pieces are evenly coated.
    500 g chicken, 2 tbsp cornflour, 2 tbsp plain flour, 1 tsp black pepper, salt
  • Heat oil in a deep pan and fry the chicken pieces on medium-high heat until golden and crispy. Remove and drain on paper towels.

  • In a separate pan or wok, heat 1 tablespoon oil.

  • Add chopped garlic and dried red chillies, and sauté until the garlic is fragrant and slightly golden.
    8 cloves garlic, 3 medium dried red chillies
  • Stir in the chilli paste, soy sauce, vinegar, ketchup, sugar, and water. Taste and add salt if needed. Mix well and bring to a simmer.

  • Add diced onions and bell peppers (if using) and cook for 2–3 minutes for a bit of crunch.

  • Then add the fried chicken pieces and toss everything together so the chicken is well coated with the sauce.
  • Sprinkle the chilli garlic chicken with chopped spring onions and serve hot with rice or noodles.
