Apple Turkey Stir Fry is a subtle dish that proves Turkey is good all year round not just at Christmas. The recipe is so simple but produces an amazing flavour that will surprise you. I normally serve this with a bowl of Noodles with Peanut Sauce as a single main dish. However, served with Chicken and Vegetable Spring Rolls, Orange Beef Stir Fry and Chinese Shrimp Dumplings (Shiu Mai) for a seriously good meal for 4 people. This recipe creates a marinade that can be made in advance and stored in the fridge. It is very simple but adds such depth to the Turkey.

Ingredients
- 2 tbsp brown sugar
- 1/2 tsp red pepper flakes
- 2 cloves garlic minced
- 2 tbsp dry Sherry
- 2 tbsp light soy sauce
- 1 tbsp cornstarch
- 1/2 cup apple juice unsweetened
- 1 1/2 lb turkey breast cut thin strips
- 1 tbsp canola oil
- 1 cup mange tout trimmed
- 2 cups carrots sliced
- 2 tbsp scallions sliced
- 3 cups rice cooked
- 1/2 cup broccoli florets
Instructions
- Combine the first seven ingredients. Add the turkey and mix to coat well. Let stand for 30 minutes.
- Heat the oil in a wok over high heat. Add the turkey mixture and stir-fry for 5 to 7 minutes. Push the turkey up on the sides of the wok.1 tbsp canola oil
- Add the vegetables and stir-fry for 3 minutes. Push the turkey back to the center of the wok and stir-fry for 2 to 3 more minutes.1 cup mange tout, 2 cups carrots, 2 tbsp scallions, 1/2 cup broccoli florets
- Serve over hot rice.3 cups rice
