  • Heat the olive oil and butter in a large saucepan over medium heat.
    1 tbsp olive oil, 1 tbsp butter
  • Add the chopped onion and cook for 5–7 minutes until soft and translucent. Stir occasionally to prevent sticking.

  • Add the minced garlic and cook for 1 minute until fragrant.

  • Stir in the tomatoes and tomato purée. Mix well so everything combines evenly.
    800 g ripe tomatoes, 2 tbsp tomato purée
  • Add the vegetable stock and bring the mixture to a gentle simmer.

  • Allow the soup to simmer for 20–25 minutes. Stir occasionally as the flavours develop.
  • Remove the pan from the heat. Blend the soup until completely smooth using a stick blender or countertop blender.
  • Return the soup to low heat and stir in the double cream.

  • Taste the soup and season with salt and black pepper. Add the sugar if the tomatoes taste too sharp.

  • Warm through gently for a few minutes, but do not let it boil.
  • Seve with flavoured croutons of your choice and a few basil leaves.
