Apple Turkey Stir Fry is a subtle dish that proves Turkey is good all year round not just at Christmas. The recipe is so simple but produces an amazing flavour that will surprise you. I normally serve this with a bowl of Noodles with Peanut Sauce as a single main dish. However, served with Chicken and Vegetable Spring Rolls, Orange Beef Stir Fry and Chinese Shrimp Dumplings (Shiu Mai) for a seriously good meal for 4 people.  This recipe creates a marinade that can be made in advance and stored in the fridge. It is very simple but adds such depth to the Turkey.

Instructions

  • Combine the first seven ingredients. Add the turkey and mix to coat well. Let stand for 30 minutes.
    2 tbsp brown sugar, 1/2 tsp red pepper flakes, 2 cloves garlic, 2 tbsp dry Sherry, 2 tbsp light soy sauce, 1 tbsp cornstarch, 1/2 cup apple juice, 1 1/2 lb turkey breast
  • Heat the oil in a wok over high heat. Add the turkey mixture and stir-fry for 5 to 7 minutes. Push the turkey up on the sides of the wok.
    1 tbsp canola oil
  • Add the vegetables and stir-fry for 3 minutes. Push the turkey back to the center of the wok and stir-fry for 2 to 3 more minutes.
    1 cup mange tout, 2 cups carrots, 2 tbsp scallions, 1/2 cup broccoli florets
  • Serve over hot rice.
    3 cups rice
