  • Boil water in a pot and cook the noodles according to packet instructions. Drain and set aside.
    150 g noodles
  • Heat the vegetable oil in a pan over medium heat. Add the chopped bacon and cook until crispy. Remove and set aside, leaving the rendered fat in the pan.
    1 tbsp vegetable oil, 4 rashers streaky bacon
  • In the same pan, add the minced garlic and sauté for 30 seconds. Add the diced tomatoes and cook until they soften and break down into a sauce (about 5 minutes).
    2 cloves garlic, 2 medium tomatoes
  • Stir in soy sauce, oyster sauce, rice vinegar, sugar and chilli flakes (if using). Simmer for 2 minutes to allow the flavours to meld.
    1 tbsp soy sauce, 1 tbsp oyster sauce, 1 tsp rice vinegar, ½ tsp sugar, ½ tsp chilli flakes
  • Return the crispy bacon to the pan and add the drained noodles. Toss well to coat everything in the sauce. Drizzle with sesame oil and mix again.
    1 tsp sesame oil
  • Divide into bowls, garnish with sliced spring onions, and enjoy!
