Braised Peas with Prosciutto is one of my favourite side dishes. The mixture of the sweet tender peas and the salty prosciutto combine perfectly. I have actually served these with just baked potatoes and what a success: a simple main dish with no effort. This side dish fits in with a Simple Roast TurkeyLow Fat Roast Potatoes and Spiced Honey Coated Carrots. It is a perfect meal especially when you add Home made Yorkshire Puddings. With so many side dish recipes where you have to keep an eye on, this recipe is so easy. 20 out of the 30 minutes is spent with it just being braised.  No action required.

  • Melt 2 Tbs of the butter in a heavy saucepan over moderate heat and cook the chopped onions for 7 or 8 minutes, stirring frequently, until soft but not brown.
  • Add the peas and chicken stock and cook 15 to 20 minutes, covered.
  • When the peas are tender, add the prosciutto and cook uncovered for 2 minutes, stirring, until the liquid is absorbed.
  • Season to taste with salt and pepper.

You can use either fresh peas or frozen peas that have been thawed.
