Broiled Pineapple Rings

Broiled Pineapple Rings are a superb dessert on their own or as a side dish to a bowl of ice cream. Either way, they are so good. I have also served them as a side dish for grilled gammon. They add a lovely freshness and moistness to the dish, not to forget the divine sweetness. I also save the juice from the canned pineapple slices to pour over the dessert as an added texture. Also the juice comes in handy when making a Pina Colada. I have also used these as a topping on pizzas and to spice up a boring ham sandwich.

  • Preheat broiler. Lay drained pineapple rings in a single layer on a 9- by 13-inch pan with sides -- allow edges of pineapple rings to touch.
  • Place a cherry in the center of each pineapple ring. Sprinkle each pineapple ring with 1 teaspoon brown sugar, then drizzle with 1/2 teaspoon margarine. Sprinkle with cinnamon.
  • Place 5 inches from broiler and broil (with oven door cracked) for 5 minutes or until topping is bubbly.

A lovely addition to any dessert. Add a scoop of ice cream for a sweet sweet.
