Iraqi cuisine was born from the cuisines of the Sumerians, Akkadians, Babylonians, Assyrians. It is full of amazing spices that brings out the best in food. Mesopotamian cuisine varies across the country.  Lamb is the favorite meat, but chicken, beef, goat and fish are also eaten. Most dishes are served with rice—usually timman anbar, a yellowish, very aromatic, long-grain rice. It is grown in the Middle Euphrates region. Northern Iraq is known for adding pomegranate to the dolma juice prominently to give it a unique taste. In Southern Iraq, fish is used extensively. While the middle region, in Baghdad and the surrounding cities is known for its variety of rice dishes and sweets. This is a cuisine with recipes that everybody should try. The Mezza or starters are a meal in them selves and utterly gorgeous.
