Mutton is an overlooked meat that when cooked properly will challenge most others for tenderness, flavour and taste. It comes from an adult sheep and is often the cheapest cut.

Mutton has a much deeper flavour than lamb and is ideal for traditional Asian curry dishes. Surprisingly, it can be used for starters, main courses and side dishes. It is mainly used in the Asian continent but that makes them the lucky ones. I find this meat to be tender and more flavoursome than others.

Tip:
This meat is best cooked slowly to make it tender and fall off the bone. It is normally cheaper but goes further.
