A Goose is a bird that is most often cooked at Thanksgiving and or Christmas but is a gorgeous ingredient through out the year. Cooked slowly with cider is a favourite but like Duck, there are many more that should be tried and shared.
But remember that a goose is not a turkey, just as a duck is not a chicken. You don’t cook them the same way. Both ducks and geese are red meat birds—meaning the breasts of both need to be served medium-rare.
Tip:
It does not taste like chicken or a turkey but more of a beef flavour.
