- 1 large frying pan skillet
Ingredients
- 4 large chicken breasts cut into bite size pieces
- 1 cup long grain rice uncooked
- 2 cups broccoli florets cut into bite size pieces
- 2 cups chicken stock
- 2 tbsp olive oil
- 2 cups cheddar cheese grated or monterey
- salt
- pepper
Instructions
- In a large frying pan add the olive oil over a medium high heat.
- Sprinkle a little salt and pepper over the chicken and rub in.
- When the oil is hot, add the seasoned chicken to the pan turning the pieces over frequently. The chicken should go brown on the outside and not pink on the inside. Should take about 5 – 6 minutes.
- Add the chopped broccoli and the cheese to the pan.
- Cover with the lid and reduce the heat down to medium-low and cook for a further 7 – 10 minutes. The broccoli should be tender.
- Remove from the heat and sprinkle the remaining cheese over the pan. Cover again for a ciuple of minutes before serving to give the cheese a chance to melt.
