  • In a large frying pan add the olive oil over a medium high heat.
  • Sprinkle a little salt and pepper over the chicken and rub in.
  • When the oil is hot, add the seasoned chicken to the pan turning the pieces over frequently. The chicken should go brown on the outside and not pink on the inside. Should take about 5 – 6 minutes.
  • When the chicken is done, add the long grain rice and the chicken stock to the pan and raise the heat until it starts to boil.
  • Reduce the heat to a rolling simmer and cook for 10 – 15 minutes until the chicken stock and virtually been absorbed by the rice. Stir frequently to make sure nothing catches.
  • Add the chopped broccoli and the cheese to the pan.
  • Cover with the lid and reduce the heat down to medium-low and cook for a further 7 – 10 minutes. The broccoli should be tender.
  • Remove from the heat and sprinkle the remaining cheese over the pan. Cover again for a ciuple of minutes before serving to give the cheese a chance to melt.
