Ingredients
For the cake:
- 200 g dark chocolate chopped
- 200 g unsalted butter cubed
- 150 g caster sugar
- 4 large eggs free range
- 100 g plain flour
- 1 tsp vanilla extract
For the centre:
- 100 g dark chocolate chopped
- 50 ml double cream
For decoration:
- 100 g white chocolate
Instructions
- Set to 180°C (160°C fan) or Gas Mark 4. Grease a 1.5-litre pudding basin and line the base with baking parchment.
- In a small saucepan, gently melt the 100g dark chocolate with double cream, stirring until smooth. Pour into a small container and freeze for at least 20 minutes until firm.100 g dark chocolate, 50 ml double cream
- In a heatproof bowl, melt the 200g chocolate and butter over a simmering pot of water, stirring occasionally. Once melted, remove from heat and let cool slightly.200 g dark chocolate, 200 g unsalted butter
- Whisk together the sugar and eggs until light and fluffy. Fold in the melted chocolate mixture, followed by the flour and vanilla extract, until just combined.150 g caster sugar, 4 large eggs, 100 g plain flour, 1 tsp vanilla extract
- Pour half the batter into the prepared pudding basin. Place the frozen chocolate centre in the middle and cover with the remaining batter.
- Bake in the preheated oven for 25 minutes. The cake should have a slightly firm crust but remain soft in the centre.
