  • Wash, peel (if desired), and cut the potatoes into evenly sized fries, about 1/4-inch thick.
    4 large russet potatoes
  • Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes. This helps remove excess starch for a crispier texture.
  • Drain the potatoes and pat them completely dry with a clean towel.
  • Heat the vegetable oil in a deep fryer or a large pot to 175°C (350°F).
    1 litre vegetable oil
  • Fry the potatoes in batches for about 3-4 minutes, just until they start to soften but not brown. Remove and drain on a paper towel.
  • Let the fries rest for 5 minutes to allow them to firm up.
  • Increase the oil temperature to 190°C (375°F) and fry the potatoes again for another 3-4 minutes until golden brown and crispy.
  • Remove from oil, drain on paper towels, and immediately season with salt, smoked paprika, or garlic powder.
