Gorgeous Goulash is a superb Hungarian recipe for colder nights. The soft delicate beef in a smooth sauce on a bed of fluffy rice makes it hard to beat. Served as a main dish, nobody leaves the table hungry. This dish can be made in advance and kept in the fridge ready. I have been known to add a little red wine to the sauce for a slight change. It works beautifully

Ingredients
- 2.5 lbs beef stewing meat is best, cubed
- 2 tbsp paprika
- 3 large onions peel and slice
- 6 oz tomato paste puree
- 1 clove garlic peel/mince
- 1 ½ cups water see notes
- 1/3 cup oil I use vegetable oil
- 3 tsp salt
- ½ tsp ground black pepper
Instructions
- Add the oil to a deep pan/pot and place over a medium heat.
- When the oil is hot, add the sliced onions and fry until soft. Should take about 4 – 5 minutes. When cooked, remove the onions using a slotted spoon and put to one side until needed later.
- Add the pepper, 2 teaspoons of salt and the paprika into a mixing bowl and combine well.
- Add the beef cubes to the mixing bowl and mix. Make sure the beef is fully covered in the dry ingredients mix.
- Carefully place the beef cubes into the hot oil and brown on all sides.
- When completed, add the cooked onions back to the pan and stir well.
- Add the tomato paste(puree), garlic, water and the final teaspoon of salt to the pan and stir again.
- Increase the heat to bring the pan to a boil and then reduce to low.
- Place a good fitting lid to the pan and allow to simmer away for about 2 hours. Don’t forget to stir every now and then to cook everything the same.
- Serve hot on a bed of rice or pasta
