Green Leaf Salad With Bleu Cheese Dressing is on of my favourite summer salad. The hit of the blue cheese with the sweet buttermilk, cottage cheese and yoghurt make the dressing a thing of beauty. I actually use low fat cheese and yoghurt so don’t even feel guilty eating lots of it!! Serve as a salad, side dish and even a main dish for a lovely refreshing and filling dish.

Ingredients
- 6 cups lettuce torn
- 1 pint cherry tomatoes halved
- 1 small red onion thinly sliced
- 1/2 cup mushrooms thinly sliced
- 1/4 cup yogurt low-fat
- 1/4 cup cottage cheese low-fat
- 4 tbsp buttermilk low-fat
- 2 tbsp bleu cheese
- ground black pepper to taste
- mint garnish
Instructions
- Combine the lettuce, tomatoes, onion, and mushrooms in a large bowl and toss thoroughly. Mound the mixture on individual plates.
- In a medium bowl, combine the yogurt, cottage cheese, buttermilk, and bleu cheese and mix by hand until smooth. Add the pepper.1/4 cup yogurt, 1/4 cup cottage cheese, 4 tbsp buttermilk, 2 tbsp bleu cheese, ground black pepper
- Drizzle the dressing over each salad. Garnish with mint and serve.mint
