New Years Recovery Brunch

  • Heat a frying pan over medium heat. Cook the bacon slices until crispy, turning as needed.
    8 slices bacon
  • Remove the bacon and place it on a plate lined with paper towels to drain.
  • In the same pan, add butter or oil if needed. Crack the eggs into the pan and fry them to your liking (sunny-side up or over easy for runny yolks). Sprinkle with a pinch of salt and pepper.
    4 large eggs, 1 tbsp butter, salt, pepper
  • While the bacon and eggs cook, slice the avocado and tomato. Wash and pat the lettuce leaves dry.
  • Lay two slices of toasted bread on a flat surface. Spread a layer of relish on each slice.
    6 slices bread, 2 tbsp relish
  • Add a leaf of lettuce to each slice, followed by two slices of tomato, two slices of crispy bacon, and quarter of the sliced avocado.
    4 slices tomato, 4 leaves lettuce, 1 medium avocado
  • Top each sandwich with a fried egg. Then add the second piece of toast per sandwich.
  • Repeat for the second layer using the remaining half of each ingredient and finally top with the third slice of toasted bread.
  • Serve immediately while warm. Cut in half for easier eating if desired, and enjoy.

Notes

Tip:
For added zest, sprinkle a little paprika or chilli flakes over the avocado before closing the sandwich. Pair with a hot cup of coffee or freshly squeezed juice for the ultimate brunch experience.
