Perfect Egg Brunch

During the week, breakfast can feel like something we squeeze between getting ready, finding lost shoes and checking the clock. At the weekend, however, everything seems to slow down. That is when I like to make something a little special, and this Perfect Egg Brunch is one of my favourite ways to start a lazy Saturday or Sunday.

The star of the plate is, of course, the egg. For me, a perfect fried egg has a beautifully cooked white with a yolk that remains soft, golden and deliciously runny. There is a real pleasure in cutting into that yolk and watching it slowly spread across everything underneath. It feels like a small cooking achievement, even though the dish itself is wonderfully simple.

I love serving the egg on a thick layer of mashed avocado. The avocado brings a cool, creamy texture that works beautifully with the warm egg. It also gives the brunch a lovely richness without making the plate feel too heavy. I usually leave a little texture in the avocado rather than mashing it completely smooth. Those tiny pieces give each mouthful a bit more character.

Then comes the red chilli. A few thin slices add a gentle kick and bring plenty of colour to the plate. You do not need a mountain of chilli because the idea is to complement the egg and avocado rather than overpower them. Instead, there should be just enough heat to make you notice it. The combination of creamy avocado, rich egg and fresh chilli is particularly good.

Seeded bread makes the perfect base. I enjoy the nutty flavour and little crunch that the seeds provide, especially when the bread has been toasted until the edges are crisp. Once the avocado sits on top, the toast softens slightly underneath. Meanwhile, the egg yolk adds another layer of richness. It is the sort of food where every ingredient seems to have a job.

What I particularly like about this brunch is the fresh side salad. It keeps the plate bright and lively rather than making the whole meal too rich. Fresh peach slices are the surprise ingredient here. Their natural sweetness works incredibly well with the savoury egg, avocado and chilli. I love that contrast because it makes every forkful slightly different.

There is also something wonderfully colourful about the finished plate. You have the golden yolk, bright green avocado, vibrant red chilli, fresh peach and the darker, toasted seeded bread. It looks like you have put far more effort into breakfast than you actually have. That is always a bonus when family or friends are sitting around the table waiting to eat!

Weekend brunches in our house are rarely formal affairs. I like putting everything on the table and letting everyone settle in with a cup of tea or coffee. Sometimes we chat about plans for the day, while other times nobody says much because everyone is simply enjoying their food. Those quiet moments are often my favourite.

The beauty of this dish is that it feels special without being fussy. It is made from familiar ingredients, yet they come together in a way that feels fresh and satisfying. The crisp toast, creamy avocado, soft egg yolk, fiery chilli and juicy peach create a lovely mixture of textures and flavours.

I also think this is exactly the sort of brunch that encourages people to sit down and enjoy themselves. There is no need to rush through it. Take your time, break into that golden yolk and let it mingle with the avocado. Add a little salad and peach to the next bite, and suddenly you have sweet, savoury, creamy, crunchy and spicy flavours all together.

For me, that is what a good homemade brunch should be. It does not need complicated ingredients or a long list of preparations. Instead, it needs good food, a comfortable table and people you enjoy sharing it with. This Perfect Egg Brunch ticks all those boxes, and it has become the sort of dish I happily return to whenever the weekend calls for something delicious.

  • Cut the avocado in half and remove the stone. Scoop the flesh into a small bowl and mash it gently with a fork. Keep some small pieces rather than making it completely smooth. Add the lemon juice and season with a little salt and black pepper.
    1 large ripe avocado, 1 tsp lemon juice, salt, black pepper
  • Wash and dry the salad leaves if necessary. Cut the peach in half, remove the stone and slice the flesh into thin wedges. Arrange the salad leaves and peach slices on the serving plates.

  • Toast the seeded bread until it becomes golden and crisp around the edges. You want enough crunch to support the creamy avocado and egg without making the toast too hard.

  • Place a frying pan over a medium heat and add the olive oil. Once the oil feels hot, carefully crack in the eggs. Try to keep the eggs separate so each one cooks neatly.
    1 tbsp olive oil, 2 large eggs
  • Cook the eggs gently until the whites become completely set while the yolks remain soft and runny. Avoid turning the eggs because the golden yolks should remain beautifully visible. If the whites need a little more cooking, reduce the heat and allow them to finish gently.
  • Place a slice of toasted seeded bread on each plate. Spread the mashed avocado generously over the top, leaving the toast edges visible.
  • Remove the stalk from the red chilli and slice it thinly. Scatter the slices over the avocado. Use more or less chilli depending on how much heat your family enjoys.

  • Carefully lift a fried egg from the pan and place it on top of each avocado-covered toast. Season the egg with a little freshly ground black pepper.
  • Add the prepared salad and peach slices alongside the toast. Serve immediately while the toast remains crisp and the egg yolk is still beautifully runny.

Notes

Tips:
The secret to this brunch is getting the egg just right. Keep the heat moderate rather than cooking aggressively, as this helps the white set without turning the edges overly crisp or leaving the yolk firm.
Choose an avocado that gives slightly when gently pressed. A perfectly ripe avocado should mash easily while still retaining a little texture.
For a milder brunch, remove the seeds from the chilli before slicing. If your family enjoys a little extra heat, leave them in.
The peach is best when ripe but still firm enough to slice neatly. Its natural sweetness provides a lovely contrast to the savoury avocado, egg and chilli.
Most importantly, serve the brunch straight away. That way, the seeded toast stays crunchy, the avocado remains fresh and the runny yolk is ready to mingle with everything underneath.
