Ingredients
- 4 large eggs free range
- 4 slices wholemeal bread
- 2 large ripe avocados
- 1 small red chilli finely sliced
- 1/2 large lime juice only
- 2 tbsp micro herbs
- 1 tbsp white vinegar
- salt to taste
- freshly ground black pepper to taste
- 1 tbsp olive oil
- chilli flakes optional
Instructions
- Cut the avocados in half and remove the stones. Scoop the flesh into a bowl.2 large ripe avocados
- Add the lime juice, olive oil, salt, and black pepper. Mash lightly with a fork until creamy but still slightly chunky.1/2 large lime, salt, 1 tbsp olive oil, freshly ground black pepper
- Stir in half of the sliced chilli. Reserve the remaining chilli for garnish.1 small red chilli
- Toast the wholemeal bread until golden and crisp around the edges.4 slices wholemeal bread
- Fill a medium saucepan with water and bring it to a gentle simmer. Add the white vinegar.1 tbsp white vinegar
- Crack one egg into a small cup or ramekin.4 large eggs
- Stir the water gently to create a whirlpool. Carefully slide the egg into the centre.
- Cook the egg for about 3 minutes until the white looks firm but the yolk stays runny.
- Lift the egg out with a slotted spoon and place it onto kitchen paper. Repeat with the remaining eggs.
- Spread the smashed avocado evenly over the toasted bread slices.
- Top each slice with a poached egg.
