Instructions

  • Remove the salmon fillets from the fridge and leave (covered) to warm to room temperature.
  • Using kitchen paper, pat the fillets dry and season with salt and pepper.
  • Place a frying pan over a medium high heat and add the olive oil.
    1 tbsp olive oil
  • When hot add the salmon fillets, skin side down and apply a little pressure so they don’t curl.
    8 large salmon fillets
  • Leave to sear for about 3 minutes until the skin is crispy and lightly/golden brown.
  • Turn the salmon over for a further 2 – 3 minutes.
  • Add the butter, garlic and sliced chilli to the pan and baste each salmon fillet well. The butter will start to darken but this is ok.
    2 tbsp unsalted butter, 4 cloves garlic, 2 large red chillies
  • Continue to fry for no more than 2 minutes bating continually.
  • Serve while still hot with a refreshingly simple salad or on a bed of rice
    1 large red bell pepper, 1/2 medium onion, 2 stalks celery, 1 medium gem lettuce, ¼ bunch parsley
