- 1 cup Parmesan grated or Gruyère
- 4 medium scallions thinly sliced

- Clean the mussels under cold running water, scrubbing the shells and removing the beards.1.5 kg fresh mussels
- Discard any mussels that are open and do not close when tapped.
- In a large pot, melt the butter over medium heat.3 tbsp unsalted butter

What a weird combination mussels and cheese but they go well together for some reason.
