Sweet Yeast Bread

A beautifully braided loaf of bread, particularly when it comes out of the oven with a golden crust and a generous scattering of pearl sugar is a delicious treat. Sweet Yeast Bread is one of those lovely bakes that looks impressive on the table but is also wonderfully inviting. It has a soft, slightly sweet centre, a delicate crust and just enough sweetness to make it a delightful snack at any time of day.

As part of my Five Ingredient Friday collection, this bread is a wonderful example of how a handful of everyday ingredients can create something quite special. The idea behind Five Ingredient Friday is to keep the main ingredients to just five, making the dish straightforward and affordable. Of course, everyday larder staples such as salt, oil and other basic seasonings do not count towards the five ingredients.

What Makes Sweet Yeast Bread So Special?

The first thing I love about this bread is its appearance. Braiding the dough gives it a lovely homemade character, and the finished loaf has an attractive shape that looks just as good on a breakfast table as it does on an afternoon tea stand.

However, it is the texture that really makes it worth baking. A good sweet yeast bread should be light, fluffy and tender inside. The yeast gives the dough its gentle rise, creating a lovely airy texture without making the bread feel too heavy. Meanwhile, the slight sweetness makes every slice enjoyable without being overly sugary.

The pearl sugar on top is another little detail that makes a difference. Unlike ordinary granulated sugar, pearl sugar keeps its shape during baking. Consequently, you get little crunchy pieces of sweetness scattered across the golden crust. I particularly enjoy that contrast between the soft bread and the crisp sugar topping.

Why It Is Perfect for Five Ingredient Friday

I enjoy recipes that do not need a cupboard full of ingredients to produce something delicious. This bread fits that idea beautifully because its flavour comes from a small selection of simple baking ingredients.

The five main ingredients provide everything needed to create the dough, develop its flavour and give it that lovely soft texture. Pearl sugar is the finishing touch, adding both sweetness and a little crunch.

Keeping the ingredients simple also means you can concentrate on the enjoyable parts of baking. Kneading the dough, watching it rise and carefully creating the braid are all satisfying steps. There is something rather rewarding about seeing a few basic ingredients turn into a loaf that looks as though it came from a traditional bakery.

How to Enjoy Sweet Yeast Bread

One of the things I like most about this bread is its versatility. It is delicious served slightly warm, when the inside is particularly soft and the aroma is at its best. A little butter spread over a slice is all it really needs, although a favourite jam or fruit preserve is also a lovely addition.

For breakfast, I enjoy it alongside a cup of tea or coffee. It is also ideal for an afternoon snack, particularly when friends or family pop in and you want something homemade to offer.

You could even serve it as part of a relaxed brunch. A few slices alongside fresh fruit, yoghurt and perhaps some cheese make a pleasant selection without creating too much work.

If you have any leftovers, do not worry. The bread can be enjoyed the following day, either as it is or lightly toasted. I sometimes find that a little butter on warm toasted sweet bread makes a particularly satisfying treat.

A Lovely Bread to Share

Although the braided appearance makes this loaf look quite special, I think its real charm is that it is made for sharing. Place it in the middle of the table and let everyone help themselves to a slice. It is the sort of homemade bake that encourages people to sit down, have a chat and enjoy something simple.

You can also experiment with the shape of the braid. A traditional three-strand braid is easy to manage and produces an attractive loaf. However, once you become comfortable handling the dough, there is nothing stopping you from trying a more elaborate design.

For me, Sweet Yeast Bread deserves a place in any collection of favourite homemade bakes. It is simple, attractive, delicious and wonderfully versatile. Most importantly, it shows exactly what Five Ingredient Friday is all about: making something delicious without needing a long shopping list.

Whether you enjoy it for breakfast, afternoon tea or simply as a little homemade treat, this golden braided bread topped with pearl sugar is one I am always happy to bake again.

Ingredients

Larder Ingredients:

  • ½ tsp salt
  • 1 large egg free range beaten (for glazing)
  • 2 tbsp pearl sugar for topping

Instructions

  • Place the flour, yeast, caster sugar and salt into a large mixing bowl. Mix everything together until evenly combined.
    500 g strong white bread flour, 7 g fast-action dried yeast, 60 g caster sugar, ½ tsp salt
  • Pour in the warm milk and add the softened butter. Mix until a rough dough forms, then bring everything together using your hands.
250 ml warm milk, 75 g unsalted butter
  • Transfer the dough to a lightly floured surface. Knead for approximately 8–10 minutes until it becomes smooth, soft and elastic. Alternatively, use a stand mixer with a dough hook for around 6–8 minutes.
  • Place the dough into a lightly greased bowl. Cover with a clean tea towel and leave somewhere warm for approximately 1 hour, or until doubled in size.
  • Turn the risen dough onto a lightly floured surface and gently knock out the air. Divide it into three equal portions.
  • Roll each portion into a long strand of approximately 35–40cm. Place the three strands side by side and pinch them together at one end. Carefully braid the strands, just as you would braid hair. Pinch the opposite ends together and tuck them underneath.
  • Transfer the braid to a baking tray lined with parchment. Cover loosely and leave for another 30 minutes until slightly puffed.
  • Preheat the oven to 180°C (160°C fan) / 350°F / Gas Mark 4. Brush the top of the bread gently with beaten egg.
    1 large egg
  • Scatter the pearl sugar generously over the top, making sure it sticks to the egg wash.
    2 tbsp pearl sugar
  • Place in the oven for 25–30 minutes until beautifully golden brown. The bread should sound slightly hollow when tapped underneath.
  • Transfer to a wire rack and allow to cool before slicing. The bread is particularly lovely when served slightly warm.

Notes

Serving Suggestions:
– Serve warm with butter.
– Spread with strawberry or raspberry jam.
– Enjoy alongside a cup of tea or coffee.
– Serve with fresh berries and yoghurt for breakfast.
– Lightly toast leftover slices for a delicious afternoon snack.
Recipe Tips:
– Milk temperature: Use lukewarm milk rather than hot milk, as excessive heat can damage the yeast.
– Kneading: Give the dough enough time to develop its elasticity. This helps create a soft, fluffy bread.
– Braiding: Keep the strands reasonably even to achieve a neat, attractive loaf.
– Pearl sugar: Do not substitute ordinary granulated sugar if you want the distinctive crunchy topping.
– Storage: Keep in an airtight container at room temperature for up to 2–3 days.
– Freezing: Slice or freeze the whole cooled loaf, wrapped well, for up to 2 months.
My recommendation: Enjoy a slice while it is still slightly warm, with a little butter melting into the soft bread. The crunchy pearl sugar makes every bite that little bit more special!
