Chicken Taco Bowl

Crunchy, colourful and packed with wonderfully seasoned chicken, this Chicken Taco Bowl brings a little Mexican sunshine to the dinner table! It is one of those dishes that looks impressive when served but is surprisingly easy to prepare. With fresh vegetables, warm spiced chicken and a crisp tortilla bowl, there is plenty to enjoy in every mouthful.

What makes this dish different from an ordinary taco is the bowl itself. Rather than folding a large taco shell around the filling, it is gently heated in an ovenproof bowl until it takes on a lovely curved shape. Once cooled slightly, it holds everything beautifully. You can then fill it generously without worrying about the contents falling out every time you take a bite. I think it makes the whole meal much more enjoyable, especially when serving family or friends.

The chicken is undoubtedly the star of the show. I love cooking it with a generous selection of Mexican-inspired spices, allowing the flavours to develop while the meat becomes tender and juicy. A little paprika, cumin, garlic and chilli bring warmth without necessarily making the dish too hot. However, you can easily adjust the seasoning to suit your own taste. For me, the secret is getting enough flavour into the chicken so that every mouthful is enjoyable.

Then comes the colourful salad, which gives this dish its freshness. Bell peppers, crisp lettuce, juicy tomatoes and finely sliced carrot provide a wonderful contrast to the warm chicken. I particularly like the slight crunch from the peppers and carrot. They also make the bowl look wonderfully inviting, with all those different colours sitting together.

Of course, no Mexican-inspired taco bowl would be complete without a little cheese. I like to scatter grated cheese generously over the top while the chicken is still warm. It softens slightly and brings everything together. A spoonful of natural yoghurt or crème fraîche is another addition I would never leave out. It provides a lovely cooling contrast to the spices and makes the whole dish feel wonderfully balanced.

Making Your Chicken Taco Bowl Your Own

One of the things I enjoy about this dish is how easily it can be adapted. The basic combination of chicken, vegetables and cheese provides a wonderful starting point, but there is plenty of room to experiment. For example, red onion makes a lovely addition, while sweetcorn brings another little burst of sweetness. You could even add some sliced avocado if you fancy something a little creamier.

The seasoning is equally flexible. I enjoy a good balance of cumin, paprika, garlic and chilli, but there is no reason to follow the same quantities every time. If you prefer something with a little more fire, add extra chilli or some finely sliced jalapeños. Alternatively, keep the spices gentle if you are cooking for younger members of the family.

What Can You Serve With Chicken Taco Bowl?

Personally, I think this dish is substantial enough to serve on its own. However, if you are feeding hungry guests, there are several lovely accompaniments worth considering.

Mexican rice is always a welcome addition, particularly when seasoned with tomato and a little garlic. Refried beans or black beans also work beautifully, adding extra substance to the meal. Alternatively, a small bowl of homemade guacamole and some fresh salsa will bring even more flavour to the table.

For anyone who enjoys a little extra heat, sliced jalapeños or a dash of hot sauce are excellent choices. I would also put some lime wedges on the table, as a squeeze of fresh lime brightens the chicken and salad wonderfully.

A Relaxed Meal Full of Flavour

Chicken Taco Bowl is particularly enjoyable when everyone can add their own favourite toppings. It makes serving family and friends easy, especially when people have different preferences. Children might prefer a little less spice, while adults can add extra chilli, salsa or jalapeños.

It is also a lovely dish for a relaxed Friday evening. The preparation is straightforward, the presentation is fun and there is very little washing up compared with preparing several separate dishes.

For me, good food does not need complicated cooking techniques or hours spent in the kitchen. A beautifully seasoned chicken filling, fresh crunchy salad, melted cheese and a crisp tortilla bowl are all you need to create something memorable. It is colourful, satisfying and full of the flavours I love about Mexican-inspired cooking.

Instructions

Shape the taco bowls:

  • Preheat the oven to 180°C (160°C fan) / 350°F. Lightly brush each tortilla with a little olive oil. Place each one inside an ovenproof bowl, gently pressing it down to create a curved bowl shape. Bake for approximately 8–12 minutes until lightly golden and crisp. Remove carefully and leave to cool slightly.
    4 large tortilla wraps

Prepare the chicken:

  • Place the chicken pieces in a bowl and add the cumin, smoked paprika, chilli powder, garlic powder, salt and black pepper. Mix thoroughly so every piece is coated in the seasoning.
600 g chicken breast, 1 tsp ground cumin, 1 tsp smoked paprika, ½ tsp chilli powder, 1 tsp garlic powder, salt, black pepper

Cook the chicken:

  • Heat the olive oil in a large frying pan over a medium heat. Add the seasoned chicken and cook for approximately 8–10 minutes, stirring regularly. Make sure the chicken is thoroughly cooked, with no pink meat remaining, and has reached an internal temperature of 75°C.
    1 tbsp olive oil

Prepare the salad:

  • While the chicken cooks, shred the lettuce, slice the bell peppers and dice the tomatoes. Prepare the carrot by finely slicing or grating it. Keep the ingredients separate until you are ready to assemble the bowls.
2 large bell pepper, 1 small iceberg lettuce, 3 medium tomatoes, 1 large carrot
  • Place the crispy tortilla bowls onto individual serving plates. Start with a generous layer of shredded lettuce, followed by the peppers, tomatoes and carrot. Spoon the warm seasoned chicken over the salad.

Add the finishing touches:

  • Sprinkle the grated cheddar cheese over the warm chicken. Finish each bowl with a generous spoonful of natural yoghurt or crème fraîche.
100 g cheddar cheese, 4 tbsp natural yoghurt
  • Add a lime wedge if desired and serve immediately.
    1 large Lime

Notes

Recipe notes and tips:
– Crispy bowls: Keep an eye on the tortillas while baking. They should be golden and firm but not brittle.
– Chicken: Thigh meat can be used instead of breast for a slightly richer flavour.
– Spice: Increase the chilli powder for extra heat or leave it out for a milder family-friendly meal.
– Cheese: Cheddar works beautifully, although Monterey Jack or a Mexican cheese blend are also excellent.
– Make ahead: Prepare the salad and spice the chicken in advance. Cook the tortilla bowls shortly before serving so they remain crisp.
My serving tip: Put the yoghurt or crème fraîche on at the very end rather than mixing it through the salad. This gives you a lovely cooling spoonful alongside the warm, spicy chicken in every mouthful.
