Tasty Tomato Pesto is a quick Italian vegetarian recipe. It’s so full of flavour, you will end up making more and more. I try to use the deli sun dried tomatoes as the oil they come in adds another dimension. This is ideal as a pesto sauce for pasta but also as a dip with vegetables and pitta breads etc.

Ingredients
- 6 oz sundried tomatoes dried or in oil
- ¼ bunch basil keep a little for garnish
- 1 medium onion peel and chop
- 1 tbsp tomato paste puree
- ¼ cup red wine drinkable quality
- ½ cup parmesan finely grated
- ¼ cup pine nuts
- 3 cloves garlic peel/minced
- ¼ cup balsamic vinegar
- salt
Instructions
- If the sundried tomatoes are dried, hydrate them by immersing them in warm water until soft and tender. If you are using deli style in flavoured oil them no need to hydrate and also include the oil!!
- Add the tomato paste/puree, tomatoes, red wine and vinegar and blend again until it reached the consistency you enjoy.
- Finally add the parmesan cheese and olive oil and stir in well. Taste and season accordingly.
- Add a few small basil leaves as garnish and serve.
