Danish Sardine and Onion Smørrebrød is a simple open sandwich of pickled herring, onion, olives and lemon slices.  It sounds simple but the flavour is amazing.  A simple and different open sandwich – This is one of the more popular smørrebrød in Denmark. I enjoy pickled herring, but it can have a very strong fishy taste. The pickling process gives the herring a sweetness that compliments the fish perfectly but can be an acquired taste. This is a superb breakfast recipe or a light lunch but would recommend not kissing anyone straight after. I normally just have this with a green tea.

Instructions

  • Spread the bread with butter, being careful to cover the bread completely.
  • Divide the sardines and olives between the pieces of bread and top each with a slice of onion.
  • Garnish with a slice of lemon and a sprig of fresh herb.

Notes

Note:
It is best to use pimiento stuffed green olives for the flavour to compliment the herring. Just give them a slice
