Herrings are a superb fish that are from the same family as sardines but larger. Their oiliness means that as well as being nourishing and gratifying to eat fresh. They can be pickled, salted and/or smoked and thus stored throughout the year.
Although several small, oily fish can also be called herrings, the most abundant currently available is the Atlantic herring. It is a fish that has been an essential and sustaining food source for many thousands of years. Herrings are used in recipes across the world including Grilled Kipper, Herring Salad and German Rolls – Rollmopse. All of which have a different flavour from the same fish but all work.
