Tuna and Sweetcorn Jacket Potato
Ingredients
- 4 large baking potatoes
- 400 g tuna in spring water or brine 2x x 200g cans drained
- 396 g sweetcorn kernels 2 x x 198g cans drained
- 4 tbsp natural yogurt fat-free
- 4 tbsp mayonnaise extra-light
Instructions
- Preheat your oven to 200°C/fan 180°C/gas 6.
- Prick the potatoes all over, and microwave for 8-10 minutes, or until they’re soft all the way through. Transfer them to a baking tray and cook in the oven for 15-20 minutes, to crisp up the skin.4 large baking potatoes
- Or, if you have more time, cook the raw potatoes on the middle shelf of your oven for 1½-2 hours, or until the skin is really crisp.

- Cover and chill until required.
- Take the jackets out of the oven and cut in half. Fill with the tuna sweetcorn mixture and serve.
