A relaxed weekend brunch when friends and family gather around the table is something I always look forward to. So I always look for dishes that feel special without being overly complicated. That is exactly why this Avocado Brunch has become one of my favourite choices. It looks vibrant, tastes wonderfully fresh, and offers plenty of flavour in every bite.

At first glance, the dish appears simple. However, the combination of ingredients creates something far more satisfying than you might expect. Thick slices of wholemeal toast provide a hearty base, while a generous layer of fresh avocado adds a creamy texture that feels both indulgent and wholesome.

What I enjoy most about this brunch is the contrast between the toppings. The avocado delivers richness, yet the diced red bell pepper adds a pleasant crunch and a subtle sweetness. Meanwhile, the tomatoes contribute freshness and colour. I always remove the seeds before dicing them. As a result, the toast stays crisp and enjoyable rather than becoming soggy after a few minutes on the plate.

The sliced black olives introduce another layer of flavour. Their slightly salty character balances the creamy avocado beautifully. Furthermore, their dark colour creates an attractive contrast against the bright greens and reds. When serving brunch to guests, presentation matters almost as much as flavour, and this dish certainly delivers on both fronts.

Fresh chives provide the finishing touch. Although they may seem like a small addition, they bring a delicate onion-like flavour that lifts the entire dish. In addition, the vibrant green flecks make the plate look even more inviting. Sometimes the simplest garnishes create the biggest impact.

During summer, the fresh vegetables make it wonderfully refreshing. During cooler months, the hearty toast and creamy avocado still provide comfort and satisfaction.

Whenever I serve this brunch, conversations seem to linger a little longer. Perhaps it is the colourful presentation. Perhaps it is the combination of fresh ingredients. Either way, people often ask for seconds and frequently request it again for future gatherings.

  • Cut the tomatoes in half and remove the seeds. Finely dice the flesh and place it into a bowl.

  • Finely dice the red bell pepper and add it to the bowl with the tomatoes.

  • Slice the black olives and set them aside.
    12 medium black olives
  • Cut the avocados in half and remove the stones. Scoop the flesh into a separate bowl.
    2 large ripe avocados
  • Mash the avocado lightly with a fork. Leave some texture rather than making it completely smooth.
  • Season the avocado with a little salt and black pepper to taste.

  • Toast the wholemeal bread until golden brown and crisp.
    4 slices wholemeal bread
  • Place each slice of toast onto a serving plate.
  • Spread a thick layer of avocado evenly over each slice of toast.
  • Scatter the diced red bell pepper and diced tomato over the avocado.
  • Add the sliced black olives across the top.
  • Sprinkle the chopped fresh chives over each slice.

  • If desired, drizzle lightly with a little olive oil.

  • Divide the goat’s cheese or feta between the plates and serve alongside the toast.
