Some of the best food ideas arrive when you stop trying too hard. That certainly happened with my Fish Finger Food. I wanted something fun, tasty, and easy to pick up with your fingers. After a little experimenting, this simple combination quickly became one of my favourite little bites.
At first glance, it looks almost too simple. However, every layer has a purpose. A crisp hash brown provides a crunchy base. A fresh lettuce leaf adds colour and a refreshing bite. On top sits a perfectly cooked piece of fish that becomes the star of the show. Finally, a small dollop of flavoured mayonnaise and a scattering of chopped chives bring everything together.
Although the ingredients are familiar, the finished result feels surprisingly elegant. Better still, it suits almost any occasion. I have served these at family gatherings, casual lunches, summer garden parties, and even as part of a buffet. Every time, the serving plate empties much faster than I expect.
I enjoy experimenting with different flavoured mayonnaises because they completely change the personality of the dish. Lemon mayonnaise creates a bright, fresh finish. Garlic mayonnaise gives a richer flavour. A touch of dill works beautifully with fish, while a hint of paprika adds gentle warmth without overpowering the other ingredients. Even a little horseradish mayonnaise can create a pleasant surprise.

One of my favourite additions sits beside the Fish Finger Food rather than on top of it. I like to serve a few slices of ripe tomato with a light drizzle of balsamic glaze. Then I sprinkle a handful of micro herbs over the tomatoes for extra freshness and colour. The sweet acidity of the tomatoes refreshes the palate before the next bite. As a result, the two are best enjoyed one after the other. They really do complement each other beautifully.
This dish also proves that presentation does not need to be complicated. Arrange the lettuce leaves neatly on a serving platter. Place the crisp hash browns on top, followed by the fish. Finish with the mayonnaise and chives. Then position the tomato slices around the edge of the platter. Another reason I keep returning to Fish Finger Food is its flexibility. You can easily adjust the toppings to suit the season or your own taste. Fresh herbs, different salad leaves, or even a light sprinkle of cracked black pepper can all add their own character. Nevertheless, the basic idea always remains the same. Good ingredients work together without competing for attention.
Sometimes cooking is about creating complicated masterpieces. On other occasions, it is about taking everyday ingredients and presenting them in a fresh, enjoyable way. Fish Finger Food reminds me that delicious food does not need to be expensive or difficult. It simply needs a little imagination, a touch of care, and a willingness to try something different. That combination has never let me down.

Fish Finger Food
Ingredients
- 300 g white fish fillets firm cod, haddock, pollock, hake or similar, cut into 12 bite-sized pieces
- 12 mini hash browns
- 12 small lettuce leaves crisp baby gem or little gem are ideal
- 1 tbsp olive oil
- Salt
- freshly ground black pepper
- 4 tbsp mayonnaise
- 1 tsp lemon juice
- 1 tsp fresh dill finely chopped
- 1 tbsp fresh chives finely chopped plus extra for garnish
For the Tomato Garnish:
- 3 large ripe tomatoes sliced
- 1 tbsp balsamic glaze
- 1 bunch micro herbs
- 12 small lettuce leaves
Instructions
- Preheat the oven to 200°C (180°C fan), Gas Mark 6.
- Place the mini hash browns on a baking tray and cook according to the packet instructions until they are crisp and golden.12 mini hash browns
- While the hash browns cook, pat the fish dry with kitchen paper and season lightly with salt and freshly ground black pepper.Salt, freshly ground black pepper
- Heat the olive oil in a frying pan over a medium heat. Cook the fish pieces for 2–3 minutes on each side, depending on their thickness, until they are lightly golden and just cooked through. Alternatively, bake them in the oven for 10–12 minutes.1 tbsp olive oil
- In a small bowl, mix together the mayonnaise, lemon juice, chopped dill and one tablespoon of chopped chives until smooth.4 tbsp mayonnaise, 1 tsp lemon juice, 1 tsp fresh dill, 1 tbsp fresh chives
- Wash and dry the lettuce leaves, then arrange them on a serving platter.12 small lettuce leaves
- Place one hot mini hash brown onto each lettuce leaf.
- Sit one piece of cooked fish neatly on top of each hash brown.300 g white fish fillets
- Add a small dollop of the flavoured mayonnaise to the top of each piece of fish.
- Finish with a light scattering of freshly chopped chives.
- Arrange the remaining 12 lettuce leaves alongside them. Place a slice of ripe tomato on each lettuce leaf, drizzle lightly with balsamic glaze and finish with a small scattering of micro herbs.3 large ripe tomatoes, 1 tbsp balsamic glaze, 1 bunch micro herbs, 12 small lettuce leaves
- Serve immediately while the fish is tender and the hash browns remain crisp. Enjoy a piece of Fish Finger Food followed by a slice of balsamic tomato for a fresh and delicious contrast.
