  • If using frozen crayfish tails, thaw them thoroughly and pat them dry with kitchen paper. This helps prevent excess water from diluting the Cajun seasoning.
  • Heat the olive oil and butter in a large frying pan over medium heat. Add the onion and red bell pepper, then cook for approximately 4–5 minutes until they begin to soften.
    2 tbsp olive oil, 30 g butter, 1 medium onion, 1 medium red bell pepper
  • Stir in the garlic, smoked paprika, sweet paprika, oregano, thyme, cayenne pepper, onion powder and garlic powder. Cook for about 30–60 seconds, stirring continuously, until the spices become fragrant.
    3 cloves garlic, 1 tsp smoked paprika, 1 tsp sweet paprika, 1 tsp dried oregano, 1 tsp dried thyme, ½ tsp cayenne pepper, ½ tsp onion powder, ½ tsp garlic powder
  • Pour in the stock and stir well, scraping the bottom of the pan to release any flavourful seasoning. Allow the mixture to simmer gently for approximately 3–4 minutes so the flavours can develop.
    150 ml chicken stock
  • Carefully add the crayfish to the pan and gently stir them through the Cajun sauce. Cook for around 3–4 minutes, or until the crayfish are piping hot. Avoid prolonged cooking because crayfish can become tough if overheated.
    500 g crayfish
  • Stir in the lemon juice and most of the fresh parsley. Taste and adjust the seasoning with salt, black pepper and additional cayenne if you prefer more heat.

  • Spoon the Cajun Crayfish onto warmed plates and scatter over the remaining parsley and sliced spring onion. Serve immediately with lemon wedges.

Serving:
