I first tried Grilled Catfish in America and loved it. It is a firm white fleshed fish that is bold enough to take strong and spicy sauces. Serve as a main dish with seasonal vegetables or a salad. Alternatively my favourite is on a bed of rice with a white wine cream sauce.
