Mushroom and Wine Steak Sauce is a superb simple sauce that all home cooks should know. This covers a perfect steak with body and flavour without detracting from the steak. Steak and mushrooms have always been the best companions but include broth and vegetables and you have perfection. However this sauce, served with a steak on a bed of rice is a main dish that will have people queuing at the door to try. However, this is a sauce that can be used with other meats. I have used this mushroom sauce with lamb and chicken. I have even used it as the sauce in a chicken pot pie.

Ingredients
- 4 oz mushrooms fresh
- 3 tbsp butter divided
- 1/4 cup onion chopped
- 1 clove garlic minced
- 12 oz beef broth condensed
- 1 1/2 tbsp tomato paste
- 1/8 tsp ground black pepper
- 2 tsp cornstarch
- 1 tbsp cold water
- 2 tbsp dry red wine quality not cheap
Instructions
- Rinse, pat dry and slice mushrooms (makes about 1 ¼ cups). In a saucepan melt butter. Add mushrooms, onion and garlic; sauté until golden, about 5 minutes.
- Blend cornstarch with water. Mix some of the hot mushroom sauce into cornstarch mixture and return to saucepan; cook and stir until clear and thickened. Stir in wine. Cook until hot.
