Chili con Queso is a simple Mexican side dish or appetiser using simple ingredients that provide so much flavour. I often add cooked chili or spicy beef mince for additional flavour turning the dish into a main course. I serve this with a large plate of tortilla chips for easy dunking and sharing. As a side dish, it goes so well with Quick Nachos, Chicken Fajitas and Tequila Shrimp for a balanced meal. As an appetiser, I serve this with Guacamole, Refried Beans – Frijoles Refritos and Mexican Hash – Picadillo. This is a simple recipe that you will make again and again as you can put it in the slow cooker, set it cooking and leave it until ready.

Ingredients
- 2 tbsp butter 30 ml
- 2 tbsp onion 30 ml, chopped
- 2 cloves garlic finely chopped
- 2 large tomatoes peeled, seeded, and diced
- 4 oz green chillies diced can
- 2 1/2 cups Monterey jack 625 ml, shredded, cheddar
Instructions
- Set the slow cooker on high heat and melt the butter.
- Sauté the onion and garlic until tender but not brown, about 10 minutes.
- Reduce the heat to low and add the remaining ingredients.
- Cook covered for 1 hour, until the cheese is completely melted. Serve with tortilla chips.
