Ingredients
- 750 g chicken Thighs/ quarters etc.
- 3 cloves garlic peel/mince/grate
- 2 tbsp runny honey
- 1 large lime cut into wedges
- 1 ½ tbsp soy sauce
- 2 tbsp lime juice
- 1/2 tsp cayenne pepper
- 1 pinch salt
- 1/4 bunch parsley chopped
Instructions
- Preheat your oven to 200C/400F/Gas Mark 6
- In a glass bowl, combine the garlic, soy sauce, honey, cayenne pepper, lime juice and salt and mix well.3 cloves garlic, 2 tbsp runny honey, 1 ½ tbsp soy sauce, 1/2 tsp cayenne pepper, 1 pinch salt, 2 tbsp lime juice
- Put the chicken into the bowl and rub the marinade into the chicken making sure all of it is covered.750 g chicken
- This is where I leave the chicken to absorb the flavours fully so in the fridge for a few hours in possible.
- Cover a sided baking tray with foil.
- Transfer the chicken and the marinade to the baking tray and cover with another piece of foil(prevents the chicken from catching and burning.)
- Place in the oven and bake for 20 minutes or until the chicken thighs are cooked. During the cooking, I like to baste the chicken in any juices and marinade in the bottom of the pan. All extra flavour.
- Remove from the oven and remove the top piece of foil.
- Place under the grill/broiler for about 2 minutes or until the chicken has started to char.
- Remove from the grill/broiler and transfer the chicken to a warmed dishes.
- Serve with lovely fluffy rice, sprinkled with chopped parsley and the lime wedges.1 large lime, 1/4 bunch parsley
