Chicken Mediterranean is a lovely combination of classic ingredients. The moist chicken breasts, potatoes and garlic with lemon juice, olives and rosemary makes a dish worth the wait. This main dish reminds me of holidays travelling around Greece. Time to go back for another visit. This is also a one dish wonder recipe.

Ingredients
- 6 large chicken breast halved/boneless and skinless
- 4 large potatoes unpeeled and quartered
- 1 tbsp olive oil
- 1/4 cup lemon juice
- 1 tbsp rosemary chopped
- 4 cloves garlic finely chopped
- 3 large scallions chopped
- 1/4 cup Kalamata or other black olive
- 1 cup mushrooms sliced
- salt to taste
- ground pepper to taste
Instructions
- Place the chicken and potatoes in an oven-proof casserole.6 large chicken breast, 4 large potatoes

- Marinate in the refrigerator for 30 to 60 minutes, turning occasionally.
- Bake covered in a preheated 400F (200C) oven for 30 minutes.
