Gingerbread Pancakes are lightly spiced with cinnamon and ginger and the dunking of molasses make these an ideal Christmas pancake. They are incredibly easy to make and jammed full of flavour. I love these with powdered sugar but maple syrup, jam and crispy bacon are also perfect combinations. Serve as a breakfast/brunch or snack, these vegetarian delights will not disappoint.

Ingredients
- 1 1/3 cup all-purpose flour 330 ml
- 1 tsp ground cinnamon 5 ml
- 1 tsp baking powder 5 ml
- 1/2 tsp ginger 2 ml, ground
- 1/4 tsp baking soda 1 ml
- 1/4 tsp Salt 1 ml
- 1 large eggs
- 1 1/4 cups milk 310 ml
- 1/4 cup molasses 60 ml
- 3 tbsp vegetable oil 45 ml
Instructions
- Combine the dry ingredients in a mixing bowl.
- In a separate bowl beat together the egg and milk.
- Beat in the molasses and oil and stir into the dry mixture, stirring just until combined-the batter should be slightly lumpy.
- Using a 1/4 cup (60 ml) measure, drop onto a hot, lightly greased griddle or skillet.
- Turn when bubbles form on the surface and the edges are golden brown.
