Beef with Peppers, Green Beans and Egg Noodles

Beef with Peppers, Green Beans and Egg Noodles manages to strike the perfect balance between comfort and vibrancy every time. It’s a meal that feels both indulgent and wholesome, offering tender slices of beef, crisp vegetables, and silky egg noodles, all coated in a rich, savoury soy sauce-based glaze. Every bite delivers a combination of textures and flavours that make it an absolute crowd-pleaser.

This dish is all about the harmony of simple ingredients working together beautifully. The beef, when cooked just right, remains juicy and succulent, soaking up the deep umami flavours of the sauce. Green beans and yellow bell peppers add a wonderful contrast—green beans bring a satisfying crunch and slight sweetness, while yellow peppers provide a mellow, juicy bite. The soft egg noodles tie everything together, ensuring that each mouthful is packed with deliciousness.

One of the best things about Beef with Peppers, Green Beans and Egg Noodles is its versatility. While it’s quick and easy enough for a midweek dinner, it’s also a dish that feels special enough for a weekend treat. The beauty lies in how the ingredients absorb the glossy soy sauce-based glaze, making every forkful incredibly moreish.

The combination of beef and vegetables in a stir-fry is a timeless favourite, but there’s something particularly satisfying about the way green beans work in this dish. Their crisp texture and slightly nutty flavour add an extra dimension, balancing the richness of the beef and the softness of the noodles. The yellow bell peppers, on the other hand, introduce a touch of sweetness that complements the savoury sauce beautifully.

A dish like this is best enjoyed straight from the pan, steaming hot and glistening with sauce. Whether eaten with chopsticks or a fork, it’s the kind of meal that encourages you to slow down and savour every bite. It’s also a fantastic dish for sharing—served family-style, it invites everyone to dig in and enjoy a satisfying, home-cooked meal together.

For those who love a little personalisation, there’s plenty of room to get creative. A touch of heat from sliced chillies, a sprinkle of sesame seeds for added nuttiness, or a few extra dashes of soy sauce can elevate the dish to suit individual tastes. No matter how it’s prepared, though, Beef with Peppers, Green Beans, and Egg Noodles remains a reliable favourite—a simple yet flavourful dish that never fails to satisfy.

Instructions

  • In a bowl, mix the sliced beef with 1 tablespoon of soy sauce, the corn starch and a drizzle of sesame oil. Let it marinate for 10 minutes while preparing the other ingredients.
400 g beef sirloin, 3 tbsp soy sauce, 1 tsp corn starch, 1 tbsp sesame oil
  • Boil the egg noodles according to the package instructions, then drain and set aside. Toss with a little sesame oil to prevent sticking.
    250 g egg noodles
  • Heat 1 tablespoon of vegetable oil in a large pan or wok over high heat. Add the marinated beef and sear for 2–3 minutes until browned. Remove from the pan and set aside.
    2 tbsp vegetable oil
  • Add the remaining 1 tablespoon oil to the pan, then toss in the garlic and ginger. Stir-fry for 30 seconds until fragrant. Add the green beans and yellow bell pepper, cooking for 3–4 minutes until just tender but still crisp.
200 g green beans, 2 cloves garlic, 1 tsp fresh ginger, 1 large yellow bell pepper
  • Return the beef to the pan, then pour in the 2 tablespoons of soy sauce, oyster sauce and hoisin sauce. Stir well to coat everything in the sauce.
1 tbsp oyster sauce, 1 tbsp hoisin sauce, 3 tbsp soy sauce
  • Toss in the cooked egg noodles, mixing everything together for another 2 minutes until heated through. If needed, add a splash of water to loosen the sauce.
  • Sprinkle with black pepper, red pepper flakes (if using), and garnish with sliced spring onions and sesame seeds. Serve hot and enjoy!
1/2 tsp black pepper, 1/2 tsp red pepper flakes, 2 large spring onions, 1 tsp sesame seeds

This was a great dish, super easy to prepare and full of flavour. I personally like my stir-fries a little spicier, so next time I’ll add more chilli flakes or some fresh red chillies for an extra kick.

I used to order a similar dish from my local Chinese restaurant, but this version is even better! The ingredients are fresh, and the sauce is rich and flavourful without being overpowering. Plus, it’s much healthier than takeaway.

The sauce keeps everything moist, and the beef stays tender. It’s great for a work lunch that actually tastes good the next day.

The dish was fantastic, and I loved the combination of beef, veggies, and noodles. However, I prefer a bit more sauce, so next time I’ll double the soy and oyster sauce for extra flavour.
