I’ve never been a cake eater until I discovered Banana Layer Cake. The addition of bananas into the cake batter and then sliced on top under a soft icing is gorgeous. Bang goes the diet but its worth it! I also add buttermilk for airiness and vanilla for that additional background flavour most cakes are missing.

Banana Layer Cake
A sweet cake that my children love. Using mashed bananas creates a smooth texture.

Ingredients
- 2 cup flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 1/4 cup sugar
- 2/3 cup shortening
- 2 large eggs free range
- 3 large bananas mashed
- 1 tsp vanilla extract essense
- 1/3 cup buttermilk
- 2 cup heavy cream whipped for frosting
- 1 tbsp icing sugar for frosting
- 2 large bananas peeled and sliced for frosting
Instructions
- Stir together flour, baking powder, baking soda and salt in medium bowl.2 cup flour, 2 tsp baking powder, 1 tsp baking soda, 1/2 tsp salt
- Beat together sugar and shortening in large bowl until well combined. Beat in eggs, mashed banana and vanilla.1 1/4 cup sugar, 2/3 cup shortening, 2 large eggs, 3 large bananas, 1 tsp vanilla extract
- Beat in flour mixture. Then beat in buttermilk.1/3 cup buttermilk
- Pour batter into 2 9-inch floured round cake pans, equally.
- Bake for 30-35 minutes at 350 degrees.
- Cool in pans 10 minutes after removed from oven, then cool completely on wire racks.
- Frost one round cake with whipped cream frosting, then layer with sliced bananas.2 cup heavy cream
- Place second cake on top, and frost entire cake.1 tbsp icing sugar
- Garnish top with banana slices.2 large bananas
