There are somethings in life that you think about and make sense. Then there are Biscuit and Beef Cups. These should not make sense but they do and boy do they do it well. I have made these on a lot of occasions and every time, they surprise me with how good they are. The lean beef, bell pepper and onions are always a hit regardless. Add sauce, I use homemade barbecue sauce and pour the mixture into a biscuit lined tin and hey presto. This is a lovely simple recipe using several family favourites which make the perfect snack.

Ingredients
- 3/4 lb ground beef lean
- 1 medium green bell pepper seeded and diced
- 1/4 cup onion finely chopped
- 1/2 cup barbecue sauce
- 2 tsp brown sugar
- 18 oz refrigerated biscuits dough
- 3/4 cup Cheddar shredded
Instructions
- Preheat oven to 400°F.
- Brown ground beef, bell pepper and onion in a medium skillet; drain, Stir in barbecue sauce and brown sugar; mix until thoroughly combined. Remove from heat.3/4 lb ground beef, 1 medium green bell pepper, 1/4 cup onion, 1/2 cup barbecue sauce, 2 tsp brown sugar
- Separate refrigerated biscuits, placing one in each of 8 ungreased muffin cups, pressing the dough up the sides to the edge of the cup.18 oz refrigerated biscuits
- Spoon beef mixture into cups and sprinkle with cheese. Bake for 12 minutes, or until biscuits are golden and cheese is melted.3/4 cup Cheddar
