Broiled Pineapple Rings are a superb dessert on their own or as a side dish to a bowl of ice cream. Either way, they are so good. I have also served them as a side dish for grilled gammon. They add a lovely freshness and moistness to the dish, not to forget the divine sweetness. I also save the juice from the canned pineapple slices to pour over the dessert as an added texture. Also the juice comes in handy when making a Pina Colada. I have also used these as a topping on pizzas and to spice up a boring ham sandwich.

Ingredients
- 20 oz pineapple rings, sliced, drained
- 10 whole maraschino cherries drained, rinsed
- 3 tbsp light brown sugar plus
- 1 tsp light brown sugar
- 5 tsp butter melted
- ground cinnamon to taste
Instructions
- Preheat broiler. Lay drained pineapple rings in a single layer on a 9- by 13-inch pan with sides -- allow edges of pineapple rings to touch.
- Place 5 inches from broiler and broil (with oven door cracked) for 5 minutes or until topping is bubbly.
Notes
A lovely addition to any dessert. Add a scoop of ice cream for a sweet sweet.
