Cheddar Chicken Casserole may sound weird but it works so well. The soft delicate chicken and gooey cheese with a thick tasty sauce makes this an excellent main dish. Adding a jalapeno chili gives a lovely little heat without being too much.

Never thought I would ever use cheddar cheese soup but in this dish it works so well.

Ingredients
- 4 large chicken breasts boneless and skinless
- 1 cup tomatoes stewed
- 10 oz condensed cream of mushroom soup can
- 10 oz condensed Cheddar cheese soup can
- 1 large jalapeño seeded and chopped
- 1 large onion peeled and chopped
- 2 cups tortilla chips
- 2 cups cheddar cheese grated
Instructions
- Preheat oven to 350°F. Lightly spray a 13x9x2-inch baking dish with vegetable cooking spray; set aside.
- Poach chicken in water to cover in a deep saucepan; cook until chicken is no longer pink, drain, cool and dice.
- Combine chicken in prepared baking dish with tomatoes, cream of mushroom soup, cheddar cheese soup, jalapeno, and onion.
- Layer tortilla chips on top and sprinkle with cheddar cheese.
- Bake for 25-30 minutes.

A casserole that includes chicken and cheese. It may sound weird but damn it works really well.
