With the summer coming soon, Cold Basil Soup will keep you cool. This vegetarian soup may sound strange but is so full of flavour. Not only that but its very easy to prepare. Serve as a soup, a snack and as a starter.

Cold Basil Soup
This green chilled soup is perfect for those warm days.

Ingredients
- 20 – 25 leaves basil fresh
- 4 medium tomatoes seeded and chopped
- 1 medium onion chopped
- 4 cloves garlic chopped
- 3 large green bell pepper seeded and chopped, capsicum
- 2 cups plain yogurt 500 ml
- 2 medium cucumber seeded and chopped
- 4 cups water 1 L
- Salt
Instructions
- Combine the basil and vegetables in an electric blender or food processor and process until smooth, working in batches and adding a little of the water if necessary.
- Transfer to a large bowl and stir in the remaining ingredients.
- Refrigerate for at least 2 hours before serving cold, garnished with chopped basil or parsley.
