
Salade a la Lyonnaise - Lyons Style Salad
A bacon and poached egg salad. This is filling, tasty and quick to create makes this a prime candidate for being a favourite.

Ingredients
- 4 large eggs poached
- 6 rashers bacon
- 1/2 lb mild greens, 225 g
- 2 tbsp fresh chives 30 ml, chopped
- 2 tbsp red wine vinegar
- 2 tbsp olive oil 30 ml
- 1 pinch Salt to taste
- 1 pinch ground pepper to taste
Instructions
- Heat the olive oil in a small saucepan over moderate heat and saute the bacon until almost crisp.
- Deglaze the pan with the vinegar and season with salt and pepper.
- Toss the greens with the dressing in a large bowl and arrange on individual serving plates.
- Place a poached egg on the salad and garnish with chopped chives.
