Instructions

  • Grease and base line a 1kg loaf tin
  • Soak the tea bag in 300ml boiling water for 5 minutes
    1 tea bag Darjeeling tea
  • Roughly chop the fruit and add to the tea, discarding the tea bag and soak for 2 to 3 hours
    300 g dried fruit, 2 large bananas
  • Preheat the oven to 180C, gas mark 4
  • Mix in the sugar and eggs
    175 g brown sugar, 2 medium eggs
  • Mix together the flour, baking powder and mixed spice and fold into the fruit mixture
    225 g wholemeal flour, 1 tsp baking powder, 1 tsp mixed spice
  • Pour into the prepared tin and bake for 45 minutes or until firm to touch and a skewer comes out clean
  • Allow to cool slightly before slicing

Notes

Try serving it with a sliced banana
