Ingredients
- 1 tea bag Darjeeling tea
- 300 g dried fruit apricots, prunes, apples etc soft
- 175 g brown sugar soft
- 2 medium eggs free range
- 225 g wholemeal flour
- 1 tsp baking powder
- 1 tsp mixed spice
- 2 large bananas ripe
Instructions
- Grease and base line a 1kg loaf tin
- Soak the tea bag in 300ml boiling water for 5 minutes1 tea bag Darjeeling tea
- Roughly chop the fruit and add to the tea, discarding the tea bag and soak for 2 to 3 hours300 g dried fruit, 2 large bananas
- Preheat the oven to 180C, gas mark 4
- Mix in the sugar and eggs175 g brown sugar, 2 medium eggs
- Mix together the flour, baking powder and mixed spice and fold into the fruit mixture
- Pour into the prepared tin and bake for 45 minutes or until firm to touch and a skewer comes out clean
- Allow to cool slightly before slicing
