Fruit Parfait
Equipment
- Blender or food processor
- 4 Serving glasses tall
Ingredients
- 800 g Greek yoghurt natural
- 300 g fresh strawberries hulled
- 200 g granola
- 100 g fresh strawberries sliced, for decorating
- mint Fresh leaves
Instructions
- Wash and hull the strawberries.
- Place the 300g of strawberries into a blender.300 g fresh strawberries
- Blitz until completely smooth to make a fresh strawberry purée.
- Spoon around 3 tablespoons of natural yoghurt into the base of each serving glass.800 g Greek yoghurt
- Add a thin layer of the strawberry purée over the yoghurt.
- Spoon another layer of yoghurt into each glass.
- Add a second layer of strawberry purée.
- Finish with a final layer of yoghurt, leaving a little space at the top.
- Cover each glass and place them in the refrigerator for at least one hour to chill.
- Just before serving, sprinkle a generous layer of granola over each parfait.200 g granola
- Decorate with the sliced fresh strawberries.100 g fresh strawberries
- Add a small mint leaf to each glass if desired.mint
- Serve immediately while the granola is still crisp.
Notes
Replace the strawberry purée with fresh blueberry purée and garnish with whole blueberries. Mango Parfait:
Use ripe mango blended until smooth for a tropical version. Blackberry Parfait:
Blend fresh blackberries and pass the purée through a sieve if you prefer to remove the seeds. Mixed Berry Parfait:
Combine strawberries, raspberries, blueberries, and blackberries for a colourful berry blend. Storage: Store the prepared parfaits, without the granola topping, covered in the refrigerator for up to 24 hours. Add the granola immediately before serving for the best texture. Serving Suggestions: Fruit Parfaits are delicious served with freshly brewed coffee, fruit juice, or a smoothie.
