Full Breakfast Burger

There are some meals that instantly bring my sons to the kitchen table. A Full Breakfast Burger does exactly that. It feels fun, filling and packed with comfort from the very first bite. Better still, it combines so many familiar breakfast favourites into one towering burger that nobody leaves the table hungry.

This burger starts with a soft sesame bun base. A spicy mayonnaise dressing adds a creamy kick straight away. Then come the sliced pickles, which cut through the richness with a sharp and tangy crunch. Every layer adds something different. As a result, each mouthful feels balanced instead of heavy.

The first burger sits neatly on top of the pickles. Melted cheese drapes over the meat and creates that rich savoury flavour everyone expects from a proper burger. Crispy bacon follows next and adds both saltiness and crunch. However, the real surprise comes from the hash brown layered in the centre. It brings a golden crisp texture that works perfectly with the juicy beef and creamy sauce.

Another burger then raises the meal to a whole new level. More bacon and melted cheese make the stack even more indulgent. Finally, crispy fried onion finishes everything with extra crunch and sweetness before the sesame bun top seals it all together.

Although this burger sounds enormous, the different textures stop it from feeling too dense. The juicy burgers, crunchy onions, crisp hash brown, creamy sauce, and smoky bacon all work together beautifully. Because every layer offers something unique, the burger stays exciting until the final bite.

This is the sort of breakfast that suits lazy weekends and family treats. It also works brilliantly for brunch when everyone wants something hearty and satisfying. Teenagers especially tend to love meals like this because the burger feels both familiar and over the top in the best possible way.

Cooking the burger carefully makes a huge difference. Good quality beef gives the burgers plenty of flavour without needing too much seasoning. Crispy bacon also matters here. Slightly undercooked bacon can turn chewy inside such a large burger. Therefore, cooking it until properly crisp helps the texture stay balanced.

The hash brown deserves attention too. A crisp outer layer prevents the burger from becoming soggy. Meanwhile, the fluffy potato centre adds warmth and comfort. Many experienced cooks also toast the sesame buns lightly before building the burger. That small step keeps the bun sturdy and adds extra flavour.

Pickles may sound simple, yet they play an important role. Without them, the burger could taste too rich. Their sharpness lifts the whole meal and keeps each layer tasting fresh. Likewise, the spicy mayonnaise adds gentle heat without overpowering the other ingredients.

Families often enjoy serving this burger with simple sides. Crispy potato wedges, baked beans, or even a fresh tomato salad work well alongside it. Some people also add a fried egg for even more breakfast flavour.

This Full Breakfast Burger is not designed as a light meal. Instead, it celebrates big flavours, hearty textures, and proper comfort food. Sometimes that is exactly what a family meal should be.

Ingredients

For the Burgers:

For the Burger Stack:

For the Spicy Mayonnaise:

Instructions

Prepare the Burger Patties:

  • Place the beef mince into a large bowl. Add the salt, pepper, smoked paprika and garlic granules. Mix everything gently with clean hands until combined.
800 g beef mince, 1 tsp salt, 1 tsp black pepper, 1 tsp smoked paprika, 1 tsp garlic granules
  • Divide the mixture into 8 equal portions. Shape each portion into a thin burger patty slightly larger than the buns. The burgers shrink slightly during cooking.
  • Place the patties into the fridge for 10 minutes while preparing the other ingredients.

Cook the Hash Browns:

  • Preheat the oven according to the packet instructions for the hash browns.
    4 medium hash browns
  • Place the hash browns onto a baking tray and cook until crisp and golden. Turn them halfway through cooking for even colour.

Prepare the Crispy Onions:

  • Place the sliced onion into a bowl and sprinkle over the flour. Toss well until lightly coated.
1 large onion, 2 tbsp plain flour
  • Heat a shallow layer of oil in a frying pan over a medium heat. Fry the onions in batches until golden and crisp. This usually takes around 4 to 5 minutes.
    Vegetable oil
  • Transfer the onions onto kitchen paper to remove excess oil.

Cook the Bacon:

  • Add the bacon slices to a hot frying pan. Cook until crisp on both sides. Remove and keep warm.
    8 slices streaky bacon

Make the Spicy Mayonnaise:

  • Mix the mayonnaise, sriracha, ketchup and smoked paprika in a small bowl until smooth.
6 tbsp mayonnaise, 1 tsp sriracha sauce, 1 tsp tomato ketchup, ½ tsp smoked paprika

Cook the Burgers:

  • Heat a frying pan or griddle over a medium-high heat.
  • Cook the burger patties for around 3 to 4 minutes per side until browned and cooked through. Avoid pressing the burgers while cooking because this removes the juices.
4 large sesame seed burger buns
  • Place a slice of cheddar onto each burger during the final minute of cooking. Allow the cheese to melt fully.
    8 slices mature cheddar cheese

Toast the Buns:

  • Slice the sesame buns in half and lightly toast them in a dry pan or under the grill for 1 to 2 minutes.

Build the Full Breakfast Burger:

  • Spread spicy mayonnaise onto the bottom half of each bun.
  • Add sliced pickles first. Place one cheesy burger on top followed by 2 slices of bacon and one hash brown.
    12 medium pickles
  • Add the second cheesy burger next. Top with the remaining bacon and a generous handful of crispy onions.
  • Finish with the sesame bun top.

Notes

Serving:
Serve immediately with potato wedges, baked beans, onion rings, or a simple tomato salad. A cold milkshake or hot coffee also works perfectly alongside this hearty breakfast burger.
