Homemade Sausage Patties are a permanent feature in our house when the children and grandchildren come over. The pork is full of flavour but add herbs, nutmeg and a little garlic and we have a main dish. The ingredients compliment each other and add to the flavour without overpowering the next. This simple recipe can be cooked on the grill, fried and bbq so good for all year round.

Everybody loves homemade sausages and the grandchildren help me make these. It is so good to know what ingredients are being eaten.

Ingredients
- 500 g ground pork
- 1 tbsp dried sage
- 1/2 tbsp dried thyme
- 1 pinch nutmeg ground
- 2 cloves garlic chopped
- 1 medium eggs free range
- 1/2 tsp Black pepper
- 1/2 tsp Salt
- 1 knob butter to fry the patties
Instructions
- Cover a baking sheet with grease proof paper/parchment paper or foil
- In a large bowl mix the pork, sage, thyme, garlic, nutmeg, salt and pepper. Once well mixed together add the egg.500 g ground pork, 1 tbsp dried sage, 1/2 tbsp dried thyme, 1 pinch nutmeg, 1/2 tsp Black pepper, 1/2 tsp Salt, 2 cloves garlic
- Once well mixed together add the egg and mix again.1 medium eggs
- Cover the bowl with cling film and place in the fridge for at least 30 minutes to allow to cool down.
- Once chill, dampen hands and shape the mixture into 8 patties and place on the baking sheet as described in Note 1.
- Heat the oil/butter in a large pan over a medium heat and fry the patties for about 4 minutes each side or until golden brown and thoroughly cooked.1 knob butter
